Happy New Year Buttermilk Biscuits and Booze

The recipes below (seen above) began as a mistake and ended up being something we wanted to repeat again with intention.  It accidentally has far less butter than the average biscuit recipe (cut back by about 1/2) and so, in the spirit of the new year, these biscuits will support resolutions to keep the weight off without having to miss out on deliciousness.

Speaking of, it needs to be acknowledged that despite a year of good eating, as we hope this blog attests to, Z managed to drop 25 pounds.  We made new resolutions last night — one of which is to keep those pounds off — and another of which is to keep up our cooking and our posting.

If you are looking for a good way to start the new year, try these… and if being healthier is a part of your resolutions, then the healthiness of the recipe is an added perk.  And if you have some extra champagne left over (as we did) then some mimosas go quite nicely.  We added some orange bitters (a present from Santa) to ours, just for something different.

 

Brown Sugar and Whiskey Buttermilk Biscuits

(Makes a baker’s dozen)

3 cups flour

2 tbsp sugar

4 tsp baking powder

1 tsp salt

1 tsp baking soda

3/4 cup (1.5 sticks) cut into 1/4 in pieces

1 tbsp whiskey

1 tbsp brown sugar

1 cup buttermilk

 

Chill the champagne.  Preheat the oven to 425.  Sip your coffee.  Grease the baking sheets.

Combine all of the dry ingredients.

Break out your champagne flutes if it has been a while or, if you’re like us, just make sure you washed them after last night’s celebrating.  Slice the butter into 1/4 in slices.

You’ll need to get messy for the next two steps.  Add the butter into the batter until it forms a “coarse meal” like texture (it’s best if you use your hands).  Add the buttermilk and whiskey, and incorporate (again, it’s best if you use your hands).

Before cleaning up, measure out 1/4 cup of the dough for each biscuit onto the prepared baking sheets and bake for 15 minutes.

Jacked-Up Mimosas

(Fills one flute)

3 oz Champagne

1 oz O.J.

2-5 dashes of orange bitters (Zach liked 2, Amanda liked 5.  5 is roughly 1/4 tsp)

Combine and sip.

If your resolutions require a liquid diet this year, then you can enjoy these mimosas without the biscuits.  But we thought they went pretty well together.  Regardless, happy 2012!

    I tried your biscuits with only one change… well, actually two, if i’m to be honest (i am a compulsive experimenter… i used olive oil instead of butter and plain non-fat yogurt instead of buttermilk). Came out well. Thanks for the inspiration; i haven’t made biscuits in years!
